Tomato and Watermelon SaladYields: 4 to 6 servings Ingredients: 5 cups watermelon, cubed and seeded 2 pints grape tomatoes, cut in half 3 tsp. sugar ½ tsp. salt 1 small red onion, thinly sliced ½ cup red wine vinegar ¼ cup olive oil Preparation Directions: ~ Combine watermelon and tomatoes in a large bowl; sprinkle with sugar and salt. Toss to coat. Let stand 15 minutes. ~ Add onion, vinegar and oil, stirring to mix well. ~ Cover and chill. Serve with lettuce leaves if desired
