A hearty, savory lentil salad is about my favorite thing to have for lunch or as a gratifying side at dinner. Simply ripe with flavor and texture, delectable in its earthy depth… healthy top to bottom, a true crowd pleaser… if I may. Lentils can be found at any grocery store, and if by chance you can find green French lentils, especially those from Le Puy-en-Velay, then my beloved… you are in for a real treat. Having said that… you know me, don’t panic… grocery store lentils are just swell, go for green as they hold their shape and texture better than the other colors. I have deliberately kept this lentil salad simple… honestly, the versatility of lentils is outrageous… consider always keeping some in your pantry. I make a simple mirepoix, which is basically equal amounts of finely chopped onion, carrot, and celery to flavor this dish.
