First, dice some boneless chicken breasts into one inch pieces and marinate it with olive oil, garlic, salt and pepper and 1 tablespoon of chopped mint. Next, thread the chicken pieces in the wooden skewers. Make sure you soak the wooden or bamboo skewers in water for 30 minutes before use. String the pieces of chicken on the skewers, alternating it with onion and fresh mint leaves. Season well with salt, pepper and place the chicken over a grill pan. While cooking, brush the chicken skewers with olive oil and lemon juice for an added flavor. For the orzo pasta salad, Amanda cooks the orzo pasta and places it in a mixing bowl. For the base flavor, she adds olive oil and lemon juice to the orzo. You can add ingredients of your own choice in the orzo salad. She mixes pine nuts, feta cheese, currants, fresh mint and chopped green onions. In the end, she seasons the orzo pasta salad with salt and pepper.
