For the cake mixture: 125g butter 1 cup caster sugar 1 large lemon (the rind) 2 eggs 1 1/2 cups self-raising flour 1 cup milk 1/2 cup desiccated coconut Lemon sour cream icing: 1 1/2 cups icing sugar 1/4 cup sour cream 1 lemon (rind) Bake in a pre-heated oven of 180 degrees celsius (approx 356 degrees fahrenheit) for about 50 mins.
